Professional courses

1. Courses for sfoglini (pastry makers)

You can take part in the course only after following the amateur course and with the approval of the teacher Alessandro.

The course lasts 3 months, from Monday to Saturday from 10:00 a.m. to 4:00 p.m, the attendance is compulsory.

The cost is of 1000,00 €. A deposit of 100.00 €. is required at the time of booking. The remaining 900.00 € must be paid before the course starts.



2. Cooking classes

The course lasts four weeks of 30 hours each for a total of 120 hours with compulsory attendance.

The course programme includes:

  • Amateur course of fresh pasta

  • Course of bread, crescentine and piadine.

  • broth, Bolognese ragù (meat-sauce), lasagne, cannelloni, butter and tomato sauce other seasonal sauces

  • Management and conservation of fresh pasta (for à la carte menu, banquets and catering)

  • Typical cakes


The cost is of 1000,00 €. A deposit of 100.00 €. is required at the time of booking. The remaining 900.00 € must be paid before the course starts.
