The school
La Vecchia Scuola Bolognese, founded by Alessandra Spisni in 1993, is the only school in the world that forms sfoglini (pastry makers). The School is a landmark in the city for the recording of transmissions and interviews, production of photographic documentation on oenogastronomic topics in a view of improvement of the territorial tradition. The school philosophy is the defense and proposal of the Bolognese oenogastronomic tradition, which has always been appreciated throughout the world (let's think about the Spaghetti Bolognese, which are present in the restaurants menus all over the world!), convinced that such a theme is able to bring to the city people from everywhere. The school has written recipe books and publishes a bimonthly magazine, by subscription. Close by the School is the Store in via Malvasia, where you can buy flour, some products such as tagliatelle, plnze, ciambelle and tools for making pasta such as cutting boards, rolling pins etc... The School is able to provide advice for restaurants, catering services for private or business dinners. |
