Dinner Pie Of Leftovers

Ingredients for the dough:
- 300 grams of flour
80 grams of lard 1 egg 20 grams of salt A pinch of sugar Cold water as needed (maximum ½ glass) Ingredients: A glass full of cooked and flavored spinach 150 grams of cooked meat Two slices of mortadella Two spoonfuls of grated parmesan cheese 3 eggs Three spoonfuls of fresh cream Salt and ground pepper 1 spoonful of dried minced basil
To make the batter: mix the flour with the salt, sugar and lard, kneading well with your hands. Make the “hill” again and add the egg and a lot of cold water (as much as needed) to obtain a soft and elastic mixture of the right consistency to be rolled-out with a rolling pin. Keep in a cool place for about 15 minutes, covered with plastic wrap. Break the eggs in a bowl and season with salt and pepper. Then add the cream and mix with a whisk until you obtain a uniform mixture. Cut the spinach into fine pieces and add them and grated parmesan to the egg, then place to the side. Cut the meat into small cubes and flavor with basil inside a small bowl. Roll-out the dough that you have already made. Lightly flour a flat work surface and lay the mixture upon it. Cut out two rectangles from the mixture, one double the size of the other. Set the larger of the two rectangles on the bottom of a rectangular pan and add a slice of mortadella upon it. Distribute the meat in a uniform matter above the mortadella and above the meat, set a layer of spinach, etc… Cover with a final layer of mortadella. Cover with the remaining rectangle and close the borders. After having sprayed with water, place in the oven at 180°C for about 25-30 minutes until the pie becomes golden-brown. Remove from the baking pan and place on a serving dish. To serve warm or cold.
